The Equilibrium 5” Santoku knife is masterfully constructed from German chromium-molybdenum-vanadium stainless steel. Originating in Japan, Santoku knives are similar in function to a chef’s knife but are generally used for producing finer cuts of meat, fruit, or vegetable. As a general-purpose knife it is the perfect blade for chopping, dicing, and mincing to prepare most food types, from seafood or meat to fruits and herbs. The Santoku knife’s hand-finished blade features a tapered grind for a sharper overall cut, while extra balance is provided by a through-tang construction combined with a curved handle and forged bolster. The blade also features indentations along each side to prevent food from sticking to it while cutting. The slightly curved handles in the Equilibrium Series are designed to encourage a rocking motion while cutting, a method popular among professional chefs. The Rockingham Forge Equilibrium Series is NOT dishwasher safe. We recommend handwashing and instantly drying the blades to maintain their optimal quality.
